the only one I've seen is one about some brothers and sisters finding starbuck while fighting cylons to save their dad... it was VERY 70's

I have the whole series on DVD, so I've seen them all.
The one you've seen is "The Young Lords", which was, as you mentioned, very 70s.
Anyway, if you're interested in the series, I recommend seeing:
Saga of a Star World & Lost Planet of the Gods (pretty much sets up the whole series).
There's also, just from the top of my head, mind you:
The Living Legend, Parts 1 & 2
War of the Gods, Parts 1 & 2
The Hand of God
On the "dark side", there's one episode you should absolutely avoid, it's something called "The Magnificent Warriors".
Of course, through the entire series, you're going to see stuff that screams "70s" (like the hair, lol), and even some sexism early on when you see all the shuttle pilot/Viper cadets (all female, mind you) in what's basically a skin-toned glorified glove called a "pressure suit".
But I personally love the series anyway. :D

Uh...I think I've seen some of The Gun on Ice Planet Zero...I've seen the one where Starbuck gets imprisoned as a smuggler with these prisons who have been making booze for the war effort for generations even though it never gets to the warriors...I can't think of any others, the last time I tried to record a few, the audio crapped out on the cable signal so that it was unwatchable. I think all the other episodes I've seen (about five) were Galactica 1980, which is horrible.

I've seen Saga of a Star World and Part 1 of the next episode, Lost Planet of The Gods, right?
Honestly, Saga of a Star World was a painful experience. It started out cheesy, but not entirely without redeeming qualities. But then they get to that casino planet. Ugh, it was horrifying.
Lost Planet of the Gods wasn't a huge step up in quality, but I'm not entirely opposed to braving the rest of the series. How people can be so devoted to it, though, I honestly don't really understand.

"Saga of a Star World" does have it's redeeming qualities, but, as you said, the stuff on Carillon is a big let down.
The reason why I mentioned both SOSW and LPOG is because they set up the basic premise of the series.
The other five episodes I mentioned are all very good episodes, and I personally think it may give you better insight into why people are so devoted to the series as they are. They're more "mythology" episodes, particularly War of the Gods.

I saw the beginning of whatever one had Apollo on that old-west style planet. Then I realized Seinfeld was on, and I changed the channel.

I tried to watch the Living Legend (part one, I think) and I couldn't stand it. I switched to something else after five minutes.

I honestly can say I LOVE the original series AND Galactica 1980. I guess you had to be there when it aired (ouch! man I feel old now. :))
Honestly, the people who watched it as a kid and were fans back then, still love it. It's the good old days...
Of course I really get why some of you watching it for the first time really don't get what the hype was about, since the new series is so much better now. Remember this was made without computers, simply because there was no CGI. Spaceships were models, Cylons were costumes and family entertainment wasn't a political statement on human rights, it was just... entertainment.
As it comes to actors, there were some great classic stars who guest starred in it: Lew Ayres, Ray Milland, Lloyd Bridges, Fred Astaire, Anne Jeffreys, Patrick Macnee... Man those really were some guest stars for a TV series. Fred Astaire then is like Tom Cruise or Brad Pritt doing a guest part in the series now.
Hey, not to say I don't like the current series. Love it to death and watch it religiously. That's sometihng I like to watch nowadays (and definitely not something I let my kids watch). So times have changed and I'm not going to tell you all that you're wrong and the original series is still great tv nowadays.
My favorite episode of the original series is "The Man With Nine Lives". It's a simple story of a con man that is been caught up by some of his victims. These victims happen to be vicious Nomen on a bloodtrail.
The con man is played by Fred Astaire. He simply stepped up to the head of ABC and said he wanted a part in this series. He did it because his grand children loved the show and later, just before he died, in an interview he stated that of all his parts this was his all time favorite.
I further like The Gun on Ice Planet Zero (which is in fact a "modern" version of The Guns of Navarone). Personally I think Saga of a Star World is way too long in the original series and I like the modern version (the Mini-Series) better.

I agree that the 1978 series was really great for its time, and it holds up quite well today compared to most of the trash on television. I like that Original Series, and would rather watch it instead of many, many other things. But I disagree that Galactica 1980 was even close to the same standard...it was just kinda stupid.

The main problem with 1980 is that it was in a timeslot that was, according to the FCC and Standards and Practices, deemed kid-friendly territory. Therefore, you had to include something educational, and it restricted the types of stories that you could tell. And you can tell it had to be kid-friendly, particularly with the "super scouts" and that garbage.
1980 could have been really interesting, and despite the absence of most of the original characters, was rather well cast (excluding Dr. Zee).

I like some of the ideas in the Original Series, but the execution usually leaves a lot to be desired.
For example "Gun On Iceplanet Zero". Aside from the silliness of an ambush with a cannon on a planet, the setup is great and the episode starts of very good. But then it falls apart when Boxey and muffit somehow stow away on the shuttle. And then they find that village full of clones. That's when it becomes really bad.
The only really good episode is "The Living Legend" I think. "Lost Planet of the Gods" is good too.
Yeah, as kid I loved it, but even then I thought that some things were somewhat silly.
